How delicious does this pizza look? When I tell you it takes 15 minutes to make I’m telling the truth. 15 minutes. If you’re well-prepared and have veggies ready or frozen it may take around 10. Having a toddler has taught me to have lots of food on hand and because it’s hit or miss with veggies most days, I keep a good supply in my freezer. I always have frozen spinach, broccoli, corn and squash. Of course, I prefer fresh and organic, but I’ll take frozen and organic over no veggies any day. Sidenote – I also throw spinach or kale into Lennox’s smoothies. Especially on the days where he turns his nose up on anything green🙄
My one trick for making this a speedy preparation is my toaster convection oven. I swear this thing cooks food so quickly. We made pizza in our traditional oven and it took twice as long. Now if you don’t have a convection toaster oven totally throw it in the traditional 11. I just feel like I’m always on a crunch for time so this is been a bonus. We just bought ours and I have to say the investment was really worth it.
So here is the simple recipe-
•whole wheat flatbread also called lavash.
• marinara sauce. I just pour a good amount into the middle and spread it with a spoon.
• fresh yellow and orange bell pepper.
• frozen spinach and frozen corn.
• diced chicken. I chop it so fine that Lennox can’t find it and pull it off.😬
•I’ve been buying sharp organic cheddar and it’s delicious. I know mozzarella is what is traditionally used but… any shredded cheese of your choice is best!
•Put it in the convection oven for about eight minutes or until the cheese is melted and the pizza is crispy. Traditional 11 takes about 15 minutes.
• add shredded Parmesan on top
• Cut tiny, bite-size squares for the littles and enjoy the other half yourself!
That’s it! Of course you can put anything you want on your pizza. I just had this aha moment with all this lavage in my fridge and was like, wait a minute, I can easily make this. Lennox loves pizza and it can truly have all the food groups depending on what you add to it. We go to this pizza place a couple times a month where you basically design your own pizza and I knew I could make one just as yummy. It’s easy. It’s quick and my son devours it. To me that is a win for the day!
