Yummy, Healthy Stir-Fry!

I love cooking! Now, I may not be the BEST cook, but I sure try to put a lot of heart into my food! AND, I can’t lie… I love a dish that’s easy, quick and healthy!! My Chicken and Veggie Stir-fry is all of the above… If I must say so myself!! Take note that I don’t really measure anything… I just chop, sauté and season to my liking. So I don’t have any ratios for you. I’m Sorry! But just taste as you go… And trust that you are making a great dish. *** Watch the salt! I am guilty of over salting. Guilty pleasure…

My simple recipe and Ingredients:

*Red and Yellow Bell Peppers
*Broccolinni
*Mushrooms
*Brussel Sprouts
*Onions
*Chopped Garlic
*Soy Sauce
*Coconut Oil
*Bouillion
*Everday Seasoning (I use the one from Trader Joe’s)
*Sesame Seeds
*Sesame Oil
*Siracha
*Brown Rice

(I cooked for two, so use your best judgement on portions/ratios when cooking for your family)

*I sauteed the brussel sprouts with coconut oil and everyday seasoning first and set them aside, because they take longer to cook!

*Next I mixed the onion, peppers, mushrooms and broccolinni in the pan along with a touch more coconut oil. Then I added some soy sauce.

*Add bouillion and some chopped garlic to roughly 1/4 cup of water and stir together. Then pour into pan.

*Keep Stiring and tasting. You may want to add some more soy sauce at this point.

*Add some siracha to the pan- IF you like a kick!

*Meanwhile, your rice should be cooking!

*Sautee your chicken in another pan, then cut and add to the veggies.

*Stir your entire dish together so the chicken is now coated with the sauce.

*Add some sesame oil and sesame seeds to the mix.

*TASTE! Does the dish need anymore seasoning? Do you want to add some pepper? This is where your individual preference comes into play!

*Plate your dish and EAT! Hope you enjoy!!
